5 Great Midweek Dinner Ideas

Hungry, But Short on Time?
Here Are 5 Great Midweek Dinner Ideas
3 min read

It’s Monday evening. After a long day’s work, you’re hungry for a satisfying meal. But you don’t want to spend two or three hours in the kitchen. You need something quick and tasty. We’ve got you covered. Here are 5 great midweek dinner ideas to keep you going Monday through Friday!

Here are the ideas we’re going to look at:

1. Spaghetti Puttanesca

2. Veggie noodle stir fry
3. Beef and broccoli
4. Bean stew
5. Tastily (we saved the best for last)

1. Spaghetti Puttanesca

Who doesn’t love spaghetti? Of all the tomato-based spaghetti sauces that are out there, puttanesca is one of the easiest to make – and one of the tastiest.

The sauce comes together with anchovies, olives and capers, making a beautifully savoury dish. Best of all, you’ll be done cooking in 20 minutes maximum.

Traditionalists would skip the parmesan – many Italians don’t approve of mixing fish and cheese! – but we won’t tell.

See here the recipe from BBC.

2. Veggie noodle stir fry

Stir fries are the ultimate quick dinner. Broadly, all you need is veggies, noodles, eggs, garlic, ginger and a few other bits from the kitchen cupboard. Then you’re eating within 15 minutes of getting started.

Whack all of the above into a hot pan – or a wok, if you have one – and hey presto, you’ve got a delicious, healthy dinner. You can chuck pretty much any vegetable into a stir fry, making it a handy way to use up excess veg in the fridge and reduce food waste.

This vegetarian recipe from Sainsbury’s uses broccoli, beans and baby sweetcorn – but feel free to swap in whatever you’ve got at home.

3. Beef and broccoli

Though this recipe takes just 15 minutes, it doesn’t skimp on flavour. All you have to do is fry the beef, meanwhile making an easy sauce on the side. Then chuck in the broccoli and the sauce and cook for a few more minutes. Serve with white rice, and you’re done.

See the recipe here from Damn Delicious.

4. Bean stew

For fast, easy to cook and healthy dinners, stews are top of the list. This one is made by sauteing onions and garlic, then adding veggies, white beans and chicken stock. Top it with parmesan and chopped parsley.

It’s straightforward but delicious and comforting. Stews are usually associated with winter, but this one still works a treat in the warmer months, too. This is a super healthy dish and you can use any vegetables you like – great for reducing food waste.
